How to trim artichokes down to just the hearts. It’s a little bit of work, but nothing beats fresh artichoke hearts! Plus our insider tip: To get to the heart you have to cut off all the leaves. Don’t throw away the leaves. Save them and steam them. You now have two meals worth of artichokes. Hooray!)
